Seruit

Seruit is a traditional dish from Lampung consisting of grilled or fried fish, prepared with sambal terasi (shrimp paste chili sauce), tempoyak (fermented durian), or young mango that is mashed. This dish is often enjoyed with warm rice, fresh vegetables, and various other accompaniments. Seruit reflects togetherness, as it is usually eaten during family gatherings or social events.

Taste 
Seruit has a unique flavor, a combination of savory, spicy, and slightly sour notes from the tempoyak or young mango.

Ingredients 
- Main ingredients: fish, such as baung (catfish), tilapia, or mujair (tilapia species). 
- Spices: sambal terasi, tempoyak, young mango, shallots, garlic, chilies, and other local spices.

The process of making seruit is simple but requires attention to detail. The fish is cleaned, with its gills and innards removed, then coated with salt and lime juice to eliminate any fishy odor. The fish is then grilled or fried until cooked and mixed with sambal terasi. The sambal is made from red chilies, shallots, garlic, grilled shrimp paste, sugar, and salt, pounded into a fine paste. This sambal creates a spicy, salty, and savory flavor. Once the sambal is ready, the fish is cut into pieces and mixed with the sambal. Tempoyak can be added according to taste for a more complex flavor. Seruit is served with warm rice and fresh vegetables.

Philosophy 
In Lampung culture, the phrase Nyeruit Yu  or muju is an invitation with a strong sense of togetherness with family, friends, and loved ones. The tradition of preparing and eating seruit together strengthens social bonds. This philosophy reflects the importance of maintaining harmony within the community.

The price of seruit varies depending on the location and the type of fish used. Typically, one serving of seruit costs between IDR 30,000 to IDR 75,000.
